This is one of my most cooked, most popular and favorite salmon recipe. I cook it when I am looking for something quick and healthy to eat and it is always complemented by my guests when I make it for them. It is so simple and easy to make, and it is so delicious. I serve it with some greens, and sometimes a bit of basmati rice,
4 fillets salmon
1/4 cup olive oil
2 tablespoons avocado oil
2 tablespoons fresh chopped parsley
2 tablespoons fresh chopped dill
2 tablespoons fresh chopped cilantro
2 tablespoons of fresh grated ginger
2 tablespoons of chopped lemongrass
4 garlic cloves
1 shallot onion, diced
salt, pepper and garlic powder to taste
Lemon to garnish
Preheat oven to 375 Degrees F.
Rub both sides of the salmon fillets with a bit of olive oil, and sprinkle both sides with the desired amount of salt, pepper and garlic powder. place the fillet in a baking dish.
In a blender, blend the remainder of olive oil, avocado oil, parsley, dill, cilantro, ginger, lemongrass, garlic and onion. Rub the mixture on top of the salmon fillets, so that all the fillets are covered completely. Place a lemon wedge on each corner of the dish (4 wedges).
Cover the dish and cook for 25 - 35 mins in the preheated oven , or until it flakes easily with a fork
Garnish and serve with your favorite side! Enjoy!
